Lactase - An enzyme secreted by the small intestine for the digestion of lactose by hydrolyzing lactose into glucose.

Lactic acid - An organic acid produced in the muscles in the absence of oxygen when glucose is broken down during strenuous muscular activity.

Lactose - A disaccharide sugar found in milk that can be hydrolyzed to produce glucose and galactose.

lactose intolerance - The inability to digest lactose.

Lacto-Vegetarian - A vegetarian sometimes referred to as a lactarian who eats dairy products such as milk, cheese and eggs.

Laparoscopic - Operation performed using a laparoscope introduced into a body cavity through a small incision in the abdominal wall.

Lean Body Mass - the percentage of muscles in the tissue or the weight of a person’s body that isn’t fat.

Lead (Pb) - A heavy metal that is essential to plants and animals but toxic to humans.

Legumes - A type of plant food that is grown in a pod. Examples are peas and beans.

Leptin - A protein hormone involved in the regulation of hunger and feeding behaviour. It acts on the hypothalamus by suppressing the appetite, speeding up metabolism and counteracting the effects of other hormones.

Leucine - An essential amino acid essential for growth and as a stimulator for protein synthesis in muscle.

Lipid - An organic compound (fat, oil, wax, etc.) that is insoluble in water but soluble in an organic solvent such as chloroform or ether.

Lipoproteins - A group of soluble proteins that combine with fat or lipids to carry the fat or lipids in the bloodstream.

Listeriosis - A disease caused by Listeria bacteria.

Lithium - A soft alkali metal used medically in the treatment of bipolar and certain other psychiatric disorders.

Liver - The largest solid organ in the body, the liver helps with the digestion process and removes toxins and waste products from the blood.

Low Density Lipoproteins (LDLs) - They transport cholesterol from the liver and small intestine to other tissues and cells in the body that need it.

Lycopene - The red carotenoid pigment found mostly in tomatoes.

Lymph node - An oval-shaped organ of the immune system distributed in various parts of the body including the stomach and armpits. The lymph node acts as a filter for foreign particles and plays an important role in the proper functioning of the immune system.

Lymph system - A system of vessels and glands in the body that is part of the immune system that help scavenge fluids and proteins and fight infection. The lymph system carries the clear fluid called lymph.

Lymphatic system - The network of vessels and glands through which the lymph drains from tissues into the bloodstream. See Lymph system.

Lysine - An essential amino acid present in most proteins. It is probably best known for relieving or preventing herpes simplex virus infections, commonly known as cold sores.
