Eating disorder - A condition or behavioural disorder involving abnormal eating habits. It can be either excess consumption or insufficient consumption of food that is detrimental to one's health.

Eczema - A skin disease causing itching and flaking mainly affecting children by can continue into adulthood in some cases.

Edema - An accumulation of fluid in the tissues that cause swelling in the certain parts of the body.

Eicosapentaenoic acid (EPA) - An omega-3 fatty acid found in fish oils that reduce inflammation by inhibiting an enzyme linked to certain inflammatory diseases.

Electrolytes - Chemical compounds that when dissolved in water break up into electrically charged particles called ions.

Elimination Diet - A diet in which only certain foods are allowed and where these foods are carefully eliminated to observe any adverse effects.

Endotoxin - A toxic substance produced and stored within bacterial cell walls.

Enema - A procedure where liquid is introduced into the rectum via the anus.

Energy Balance - This is the relationship between energy taken in and energy expended in the body.

Energy Expenditure - The amount of energy measured in calories that a person uses.

Enteric - Relating to or affecting the intestine.

Enzymatic - related to the use or production of enzymes.

Enzyme - A protein that acts as a catalyst to bring about a specific chemical reaction.

Enriched Foods - Foods to which nutrients have been added to improve their nutritional value.

Epidemic - A widespread occurrence of a disease with more cases than would normally be expected in a particular region within a given time period.

Epidemiology - The study of the distribution of disease in populations.

Epigenetics - The study of heritable changes in phenotype to the genes.

Epinephrine - A hormone secreted by the adrenal glands also known as adrenaline. It quickens hearts rate and amongst other things can lead to the 'fight or flight' response.

Epithelial cell - A sheet of closely packed cells lining the inner and outer surfaces of the body

Escherichia coli - A common bacterium found in the human large intestine. Most strains are harmless but some can be dangerous pathogens, some of which are known to be responsible for certain types of food poisoning.

Esophagus - The part of the alimentary canal that connects the pharynx (throat) with the stomach.

Essential amino acids - The amino acids that your body cannot make but are required in your diet.

Essential fatty acid - A fat that your body needs but cannot make from other fats in the body and must be obtained from certain foods.

Essential nutrient - An essential nutrient that your body cannot make but that is required in your diet.

Essential Hypertension - High blood pressure with an unknown cause.

Estradiol - A female hormone produced in the ovaries that is a type of estrogen.

Ester - An organic compound produced by the reaction between an acid and alcohol.

Estrogen - A female hormone produced by the ovaries. A deficiency can lead to osteoporosis.

Exchange Lists - Lists of foods with interchangeable nutrient and calorie contents used for meal planning and specific forms of diet therapy.
