Cachexia - Severe malnutrition and weight loss usually caused by a chronic disease.

Cadmium - The chemical element Cd that is toxic to humans and present in cigarette smoke.

Caffeine - A stimulant present in coffee, tea and many carbonated drinks.

Calcium - An abundant element and essential mineral important for the forming and maintaining of bones and teeth. It is also required for blood clotting and muscle contraction processes.

Calipers - Metal or plastic tools used to measure the diameter of an object. The fold thickness of the skin can be measured with skin calipers to determine the body mass.

Caloric density - A measure of the energy value contained in food, usually defined by the number of calories contained in one gram of food.

Calorie - A unit of energy in food. It is also known as kcal or kilocalorie and represents the amount of heat needed to raise the temperature of one kilogram of water by one degree Celsius.

Cancer - A disease caused by an abnormal growth of cells which spread in an uncontrolled way.

Candidiasis - A yeast infection.

Capsule - 1) Medical: The membranous structure that envelops an organ, joint, tumour, or any other part of the body that is usually made up of collagen connective tissue. 2) Pharmaceutical: A soluble container containing a drug that is usually administered orally.

Carbohydrate - An organic compound consisting of carbon, hydrogen and oxygen that provides the major source of energy in the average diet.

Carbohydrate loading - A dietary practice used to temporarily increase the amount of glycogen stored in your muscles. This is sometimes used prior to an athletic event.

Carbon dioxide (CO2) - A gas present in the air that is primarily responsible for the greenhouse effect. It is a common waste product produced during the respiration process.

Carnitine - A nonessential amino acid and a derivative of lycine that plays a role in metabolizing fat and producing energy. It is found in red meat.

Cardiovascular - Relating to the heart and the circulatory system.

Cardiovascular Disease - A disease affecting the heart and circulatory system.

Carotene - A red orange pigment usually found in fruit and vegetables that is a precursor of vitamin A.

Carotenoid - Pigments that make fruits and vegetables orange, red, and yellow. They are natural fat-soluble.

Cartilage - The elastic tissue found in the joints and certain other parts of the body.

Catabolism - A process where large molecules are broken down into smaller molecules. It is the opposite of anabolism.

Cation - A positively charged ion.

Cellulose - A long chain of sugar molecules that is indigestible in humans but provides fibre in the diet.

Cholecalciferol - A form of vitamin D important in regulating calcium levels in the body.

Cholecystokinin - A hormone that is released after a meal when food is digested.

Cholesterol - A fatty substance synthesized in the liver that is essential for some bodily functions. However, high levels can lead to heart disease and other complications.

Choline - A nutrient that is not a vitamin, mineral, protein, carbohydrate, or fat, but it's usually lumped in with the B-vitamins

Chondroiton sulfates - A naturally occurring chain of sugars that is believed to contribute to the healing of joints or degenerative joint disease.

Chromium - A trace element that helps insulin to assist glucose to enter the body's cells.

Chronic - A long lasting persistent disease.

Chronic disease - A disease that occurs over a long period of time.

Chylomicron - A lipoprotein formed in the small intestine and absorbed into the blood during digestion.

Cholecalciferol - A form of vitamin D.

Clear-liquid diet - A diet consisting of only liquids containing mostly carbohydrates and water.

Clinically Severe Obesity - Another term for morbid obesity.

Clinical Trials - Trials to evaluate how effective and safe medications are by observing the effects on large groups of people.

Cobalamine - Vitamin B12.

Coenzyme - A substance that works in conjunction with other enzymes.

Collagen - A fibrous protein found in parts of the lower layers of the skin and other connective tissue.

Colon - The bottom part of digestive system that is used for removing water from digested food and letting the remaining solid waste move through the rectum and exit via the anus.

Complete protein - A protein that contains all the essential amino acids.

Complex carbohydrate - Polysaccharides that are made of starches and dietary fibres.

Convenience food - Food that requires very little preparation prior to eating.

copper - This zinc-balancing mineral is important in many enzymes as well as in the production of hemoglobin, the molecule that transports oxygen. It also plays a role in the functioning of the prostate gland and the activity of the oil glands, helping prevent acne. Nerves and joints require copper for healthy functioning.

Copper - Copper is an essential element required for the absorption and metabolism of iron in the body.

Coronary heart disease (CHD) - A disease of the coronary arteries, where the blood vessels surrounding the heart narrow because of the build up of fatty deposits. It is the biggest killer in both the UK and USA today affecting millions of people.

Crash Diets - Fad type diets with the main purpose of reducing weight very quickly.

Cyanocobalamin - A synthetic chemical used as a vitamin B12 nutritional supplements.
